"Delicious Irony" in Vegetarian Restaurant Location

A former butcher shop in Bury, UK is being transformed into a vegetarian restaurant. The shop, which still has the word "butcher" carved into it's stone facade, will now serve patrons an all-vegetarian assortment of dishes by owner, Joseph Taylor.

Taylor was raised as a vegetarian and wanted to provide more options for vegetarians in the area. He also likes the idea of housing his restaurant in the former butcher shop.
"There's a delicious irony in that. Bury doesn't have anywhere that caters for vegetarians, or at least it didn't until now. There was a gap in the market for people like us who are passionate about animals," he said
The restaurant, called Josef's Vegetarian Cafe, opens today.
